The protein--typically chicken, goat, mutton, or pork--is traditionally grilled over an open fire of pimento branches and coals. The technique of "jerking" meat is said to have originated with the indigenous people of Jamaica, the Arawak Indians, who would slow-cook wild game over a wood fire, seasoning it with a blend of herbs and spices. When enslaved Africans arrived on the island, they adapted this cooking technique to the meat that was available to them, adding their own blend of herbs and spices to create the distinctive flavor of jerk seasoning.
